Default Anyone have a good Smoked Salmon recipe to share?

Anyone have a good Smoked Salmon recipe they are willing to share?

Ideally, looking for a good Jewish deli lox type recipe. Canters, Chasens, The Stage, Jerry's, etc... but open to any good or unique smoked salmon recipes



Here's what smoking woods I have to work with: apple, cherry, plum, hickory. & mesquite.

Doing this with a natural wood (ie: charcoal) smoker (a modified Weber OTG 21") - not an electric.

Lox is cold smoked so, wouldn't a typical smoker be too hot?

Lox is dry brined. I made smoked salmon once. I can only eat so much in the course of one week.

As for cooking with smoked salmon. Cut into fine pieces and add to tomato sauce for a few minutes under low heat. Works awesome with pasta and a touch of fresh rosemary. Don't let it really "cook".
