Honestly, I'd cook longer than the recipe calls for. I probably left them on closer to 20 minutes than 10 on top of putting them in the oven to bake. Even at that point, I wouldn't consider the veggies to be falling apart and I'd error on the side of them being soft than crunchy at all.
