I was getting ready to make up some steak tonight and realized we were out of brown sugar, which I normally use in my dry rub. So, I Googled some other dry rub recipes, found one, and tweaked it a bit.
1 Tbsp cocoa powder (actually used store-brand chocolate milk mix)
2 Tsp cumin
Salt and Pepper to taste
It sounds like a lot of cumin, but you need the spice to counter the sweetness of the cocoa.
I put the steak under the broiler for about 7 mins a side, and it was amazing: nice thick spicy-sweet crust...
