That makes fairly simple, easy and traditional crab cakes. You can spice it up however you feel like. Maybe some celery in the mix? Different spices (a little garlic or old bay seasoning comes to mind). Let me know what you end up using

2 - 1#cans Phillips Backfin Crabmeat
1/4 c finely diced celery 1/2 c shredded white cheddar cheese 2 T Tabasco sauce 1 tsp Salt 1 tsp Ground White Pepper 1 1/2 T Old Bay Seasoning 2 Eggs beaten 1/2-3/4 c Panko Bread Crumbs or Crushed CLUB CRACKERS 1/2 c chopped Fresh Chives Drain Crabmeat and add all ingredients together. Mix completely and then form into patties. Fry in cast iron skillet or bake in 350 oven for 25-30 min( 350 degree oven for 20 min if using convectional). |

Well... I gotta say I like my crab cakes very simple. That being said... I have adopted Paula Dean's recipe and tweaked it a little for my tastes. Here is what I have come up with:
1 lb crab 1/2 cup Ritz crackers 3 green onions with tops chopped fine 1/4 cup mayo 1 egg 1 tsp worsty sauce 1 tsp dry mustard 1/4 tsp garlic powder 1 tsp salt dash of cayenne flour for dusting peanut oil Combine all ingredients except for flour and oil. Make patties Dust with flour Pan fry in hot peanut oil until browned Flip and repeat The Bomb!! |
