We usually do a sausage stuffing every year. This year we are doing a Turduken with a sausage and shrimp stuffing.

I make sausage stuffing with bagged stuffing mix, chopped up sausage, and diced granny smith apples. I cook the sausage in a fry pan and throw the apples with some onions in the pan to soften them up. Even a mild sausage like breakfast link is good. I'll cheat sometimes and use precooked "brown and serve" kind of sausage.
