I have some 2006 NC hoyo's I just picked up, will be trying one of these after I pick up some cider today.

Let your cider harden then freeze it (preferably outside). The alcohol will not freeze and you can pour off what is sometimes called applejack. Delicious.

I have never thought of this pairing, but now I am intruiged. I am going to have to make anothe trrip to Apple Hill this season to pick up some cider.
