I bought extra jalapenos for my chili today just so I could try something like this.

If you bake these, then yes, wrapping them in bacon will work, however if these will go from chilled to heated up on a grill fairly quick. If you use bacon, then the best way to cook them will be in an oven. I used a veggie basket and put the stuffed peppers in the veggie basktet, stuffed side up and thew them on the grill for about 10 minutes on high.

Not stuffed, but a fav of mine.
1" Cube of beef or Lamb 1/4 of Jalepeno 1/2" slice of fresh pineapple Stack the above together, wrap in a 1/2 slice of bacon, skewer with soaked toothpick, season(salt & pepper) and grill. Make plenty. You get it all; sweet, heat, meat, and smoke(both from the grill and the bacon) |

Inspired by the thread I made some of these tonight. Didn't leave them in the oven long enough though and I think I need a rack. But they were tasty.
![]() Filling was made from: Cream cheese Shredded cheddar Parmesan Real Bacon bits Cut off the tops and cleaned them out with a vegetable peeler and propped them up in a pan with aluminium foil. Then mixed the filling in a plastic zippered bag and cut off the tip to squeeze it out like a piping bag. Baked them till they got browned, but should have been a bit longer, still al little too raw.
