I use buttermilk and crushed tortilla chips to make a great coating.
Cut 'em in half lengthwise, scoop the seeds if you're so inclined. Boil them for a scant 2 minutes to just barely start to precook them a bit. (keeps 'em from being too crunchy and raw tasting after baking) Fill the halves with whatever mixture you like. (I mix 1/2 sharp cheddar and 1/2 cream cheese, along with some onion and garlic powder and a little chipotle powder.) Dip them in buttermilk, then roll lightly in flour (I actually like Soy flour, it's a little sweeter and nuttier) then back in the buttermilk and dredge them in crushed tortilla chips. Bake at 425 for about 6 minutes, then broil them for a minute or two until they're toasted a bit. The tortilla chip coating gives a really excellent crunchy texture. Yummers.

Not stuffed, but a fav of mine.
1" Cube of beef or Lamb 1/4 of Jalepeno 1/2" slice of fresh pineapple Stack the above together, wrap in a 1/2 slice of bacon, skewer with soaked toothpick, season(salt & pepper) and grill. Make plenty. You get it all; sweet, heat, meat, and smoke(both from the grill and the bacon) |
