I just sealed up a 19lb bone in rib roast.
Hoping to make it to or past day 75 this time.

March 10 is a Saturday, and a good 78 days from 12/23...and, I think I happen to be free that day....

The meat will make it to day 78. I plan to cut it up this weekend.
