I like my local place Thaicoon and Sushi Bar in Marietta but I love going to Aomi in Norcross when I am over near my parents (both Marietta and Norcross are suburbs North of Atlanta)

I love watching a master sushi chef work, and I'd love to have a set of those knives. The soy "rule" is legit, but I've seen plenty of Japanese violate the "fingers only" rule. Maybe the customs are different for high-end places, but it's common for food to be served communal style in Japan, and it's bad form to take food from a plate with your fingers. You use the "wrong" end of your chopsticks to take food and place it on your own plate. I was also surprised that he served chutoro. Otoro is the most prized cut of tuna. That anago looked delicious, though.
