Smoked Rabbit
Today I smoked my 1st rabbit. It was delicious. After some research I also learned that rabbit is VERY healthy. Here is a pic.
I used salt and pepper, Italian dressing with a touch of Steak Sprinkle at the end of the cook sold at www.texasbbqrub.com Smoked on the Traeger. |

There is so little fat on rabbits did this make the meat dry out at all in the smoker? I love to braise them for about an hour and a half they come out nice and tender and are great.

It was not dry at all. I plan on doing another one in the coming weeks, might tweek my recipe a bit and play around with it. Maybe I will braise my next one.
