Chicken a la Meter
Damn, Ron is tearing it up with the chicken recipes tonight (by the way, thanks Ron...looking forward to trying some of these out).
Here is one that I make that everyone loves: Chicken breasts, marinated for only a few hours in balsamic, olive oil, fresh garlic, and maybe some basil. Sautee the chicken breasts on one side in butter. I'll sometimes toss in some balsamic or wine or whatever while they sautee. Flip breasts. Cook on other side, when nearly done add slices of sharp provelone cheese and cover until melted. Then add sundried tomatoes and pepidews on top of the chicken. Wrap in a slice of prosciutto and serve. I sometimes work pesto into the mix too. |

Damn that sounds good!!!!
Seems like a fast cook, and MAN it's got to be good...Provolone and Prosciutto!!!!!! Thanks, I'm going to try it this weekend!!!!! |
