Stuffed Scallops
This is an incredibly simple personal favorite of mine. Butterfly some nice big sea scallops and roll them around in some olive oil on a plate. Make a pesto from fresh basil, garlic, sea or kosher salt,fresh pepper & olive oil. I don't measure I just fill my food processor with the basil & some garlic cloves salt & pepper to taste and spin it adding the olive oil incrementally until I get the desired consistency. Spoon some of the mixture into each scallop and throw on the grill or pan sear.

I just had scallops tonight....bay scallops fried up with some garlic. I'll keep this in mind for next time though!
