Default Warm Spinach and Artichoke dip

Warm Spinach and Artichoke Dip

Ingredients:

1 tablespoon olive oil
1 medium onion, finely chopped (about 1 cup)
3 cloves minced garlic (about 1 ½ Tb)
1 15 oz can Artichoke hearts, drained and coarsely chopped
1 (10-ounce) package frozen chopped spinach, defrosted, excess liquid squeezed out
1/2 cup sour cream ***
1/4 cup real mayonnaise ***
1/2 cup (about 4 ounces) cream cheese ***
2 ounces (about 1/2 cup) parmesan cheese
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
French bread, Pita Wedges or Crackers for serving.
Preheat oven to 350 degrees F.

*** Low Fat or Fat Free may be substituted ***

Method:
Heat the oil in a sauté pan over medium heat. Add onions and garlic cook, stirring occasionally, 4 to 5 minutes. Remove from heat.
In a large bowl combine the sour cream, mayonnaise, cream cheese, parmesan, sautéed onion mixture, salt and pepper, mix until well combined, then fold in the artichoke hearts, and spinach. Spread into an 8-inch glass square baking dish or 9-inch glass pie plate that has been lightly sprayed with cooking spray.
Bake for 20 minutes or until heated through and bubbly.

Serve with French bread, Pita wedges or crackers.

WARNING!!! This stuff is highly addictive.
