Default Anyone ever make turkey pastrami?

My brother is coming up next week for some cocktails, fishing and cigars. We always want to cook something interesting soe asked if we can do a turkey pastrami in my charcoal smoker.

We wanted to do it with a butterflied whole turkey instead of just the breast

Any thoughts? I've only used the charcoal smoker once before so it should be interesting.

Here are some spices you may want to consider for the Turkey rub:

2 tablespoons coriander seeds
2 tablespoons cracked black peppercorns
3 tablespoons kosher salt
3 tablespoons sweet paprika
2 tablespoons dark brown sugar
1 tablespoon mustard seeds
1 tablespoon ground ginger
6 garlic cloves, minced

What kind of smoker do you have? What do you use to create the smoke?

Never made pastrami with turkey myself, but if there is only one guy out there who can trust for a smoker recipe it's Steve Raichlen:

I'm not sure how dark meat pastrami would come out. Could be great. Could be greasy meh.

Something else to keep in mind is that dark meat is done at 180 while breasts are 165.
