Default Looking for help

Need some guiedance.....my wife got me a new smoker with the side burner box, what I need to know is about how long for a 8lb butt at 200 degrees. Also so plan on doing a 3 1/2 pound brisket. Already have them rubbed down. Just looking for a idea on time.

For the butt I would figure somewhere between 16-18 hours at 200. If you bring it up to 225 you are looking at 12-14 hours. Give yourself plenty of time knowing that you can hold it in a small cooler for several yours and it will still be plenty hot.

The brisket must be a part of the flat. I have never cooked one that small, so I don't really know. I would guess something like 6-8 hours. It still has to go through the same process for the fat to render. Again though, you can cooler it and it will be fine.

Figure roughly 90 minutes a lb at 225. 200 is a little on the low side for smoking...
