Kufta kebab
Kufta is ground meat and spices, mixed with bulgur (burghl) wheat. Easy and extremely tasty with some taziki and veggies on pita.
Start with ground meat, beef, lamb, chicken, turkey..... For each pound of meat: 1/4 cup medium coarse bulgur wheat, reconstituted in a couple cups hot tap water for 5 minutes then drained. 1 medium yellow onion, minced fine 1 large clove garlic, crushed and minced fine (or thru a press) 1/3 cup coarsely chopped flat leaf parsley, stems and all 1/2 tsp ground cumin 1/4 tsp ground allspice 1/4 tsp ground cayenne pepper 1/2 tsp salt 1 tsp FRESHLY GROUND black pepper Olive Oil * use with lean ground meat, add 1-2Tb Mix all ingredients well, cover and refrigerate at least 2 hours. Now for the fun part, wet your hands and grab 1/4 lb of the meat, form around your skewer of choice. If you are into kebab, you will want to invest in a set of kufta skewers, which are flat and wide, so you can form the kufta kebab around the skewer. The other route is to use a large bamboo skewer, cheap chopsticks work best (like go to BD's, have lunch and grab a half dozen or so pairs of the chopsticks) Grill over high heat until you get a good char, then reduce heat and grill until the meat is done to your liking.
