Many stouts are good with a few years of age.

Yeah for sure. Classic example of "long term" aging for stouts is Bells Expy.. Late 90's bottles are drinking great right now.

I cant imagine holding onto a beer for that long. I have a few that im trying to age but i have to litterally hide them in the fridge so i dont see them.

Well, I believe they are an acquired taste for most. I reacted similarly to my first sour, but then began to appreciate and crave them.

That said, Monk's is a good example of that style IMO, but certainly not the best. I think Rodenbach Grand Cru (not the regular Rodenbach) is a better example of the style.

There are also a lot of other sour/wild styles out there, some very sour and some barely sour at all.

We've got a few of certain things hidden so that we don't drink them. 2011 KBS, a bunch of GI Big John, some of this years Trader Joe's seasonal, and a few others.

And from last night (maybe this actually fits in the great pair thread, ):

Dose Bud light count as beer or semi chilled gnats piss.

Or a better note ive been drinking a lot of Robinson's Old Tom ale and unicorn both are stella ales and another one that is good for this time of the year is Teakersons Old Peculier.

Ruthless Rye from Sierra Nevada......GREAT STUFF!! So happy we finally got something other than the Pale Ale up here. Don't get me wrong, I still love the PA, but it's nice to have something different from them finally.

Other favorite was their Tumbler Ale, but only had 1 12 pack in stock and never replenished.

Ruthless Rye is one of the better SA offerings, IMO. That and the Torpedo.
