Red is roe, green is hepatopancreas and is where the contaminants such as mercury are concentrated. I avoid this stuff although I ate a lot as a kid.

I love seafood, but I love lobster most of all. I eat it all, except the shell and some parts I'm told not to eat, but I love that green stuff, I also like the yellow stuff in Blue crabs too though...

Damn...making me hungry here (not for the green goop). Been a while since I've had good lobster, ann if I can choose, I'll take Dungeness Crab all the time.
