Stuffed cabbage rolls
STUFFED CABBAGE ROLLS
MAKES 6-8 SERVINGS 1 large head of cabbage (3lbs) 3 Teaspoon salt 1 LB ground veal 1 LB ground beef 1 ¼ Cup milk 2/3 Cup dry bread crumbs ¼ Cup minced onion 1 Teaspoon nutmeg Discard any wilted cabbage leafs from head. Rinse and cut out core from cabbage head. In a large saucepot place cabbage head into pot and add water until head is covered. Add 2 teaspoons of salt to water cover and boil until leaves are softened. Carefully remove leaves from head and set aside. In bowl combine milk, veal, beef, onion and nutmeg. Take one large cabbage leaf and one small cabbage leaf. Place the smaller leaf into the middle of the large leaf. Take ½ cup of the meat mixture and place it into the middle of the cabbage leafs. Fold over edges and roll. Take tooth picks and fasten the roll so it does not open up. In a large saucepot boil water and remaining salt, bring to a boil. Place stuffed cabbage leafs into boiling water one at a time and boil for 20 minutes. Carefully remove cabbage rolls with slotted spoon. |
