Season opens on September 1, and the geese are coming in by the thousand.

Gulf of Mexico
1 oz Grey Goose vodka
1 oz melon liqueur
1 oz Blue Curacao liqueur
1 oz pineapple juice

Fill a shaker 3/4 full with ice and add ingredients. Shake well and strain into a cocktail glass. I usually double the vodka and halve the melon liqueur.

Wer could go out right now and fill up a pick-up truck with geese.
All we need is my pellet gun and a keg.
This is the land of never-ending Canada Geese. We are utterly infested.

They're awful greasy birds. I bake them in a cooking bag on a rack with a couple cans of beer in there.
Then season to your liking. Fresh herbs are everywhere right now.
Basil her up, find an injector recipe you like, and have a nice caprese salad and grilled green beans or asparagus alongside.

I get if you stuffed her with zuchini it'd pull out that grease, too.

Neil, you should keep that goose grease for frying chicken wings, by the way.
Goose and duck grease is supposed to be the best grease in the world for people to eat.
I just don't like it. Don't even like gravy from it. It's grainy to me.
But, by God, it fries FANTASTIC chicken wings. The best EVAR!!!

Neil, check out honest-food.net. You'll find all kinds of geese recipes there. The author even has a cook book called Duck, Duck, Goose.

I used to hunt geese all the time, always gave the meat to others who enjoyed it more than I ever would, best recipe I have heard though is:

1 goose
1 cow pie
Various seasonings

Stuff cow pie into goose, cook thoroughly, remove cow pie and season, throw goose in trash and eat the cow pie.

I take it to a sausage guy and get hotdogs and summer sausage made. I don't have a recipe, but I was given goose pastrami. It was very good. Supposedly just a basic pastrami brine.
