Just kidding, I do remember these, but I am paying close attention to this thread, I have a very nice and fairly expensive set of knives my brother bought me as a wedding present back when I was a sous chef, while I'm perfectly happy using a steel on them, it would be nice to have a good system. Then again at 600 bucks which is about the value of 3 of the knives, I might just end up having them sharpened every year or so by a pro. |

I will have to say that a lansky is a waste of and money I had one and recently gave it away! (was going to throw it away but a buddy of mine thinks it's the chit?) I have a couple of steals and ceramic stones I keep a round for touch ups. But as for my main system I use the work sharp belt sharpening system. Since I have bought this I love it and use no other. I love my knife collection and have way to many but they are all sharp. Try the works sharp I think you would be very happy!
