Um , just a little . I would love to stumble across the Chimay Cheese , . I've only got the Premier(red) in my cellar but will soon cellar some of the Blue just to see how it mellows if at all . Chimay changed how I look at Ale . Those Belgians really know what they're doing . Lots of good advice in this thread . Ommegang from Cooperstown , NY has a few excellent Ales , the Witte and the Dubbel are really good . Next Christmas keep your eyes out for the St.Bernardus Christmas Ale , simply amazing . There aren't many Belgian brews I don't like. Chimay's definitely up there. My wallet isn't too fond of it though.

sorry for the long time in between replies. I didn't read the date on the bottles. I just drank 'em and enjoyed the hell outta them.

I guess when the next batch runs through costco i'll look at the dates.
