Your results are interesting.
I have my vino plugged in from Spring to Fall, and the drain plugged.
1.5 lbs of beads on the bottom of the vino.

My vino stays ROCK solid @64% and 67-68*.

I never saw you mention if you had sealed up your drain hole in the vino?

I also ran wires through my drain hole and have a computer fan on a timer to help circulate air inside (unnecessary, but a fun little project)
