I have roasted honey processed beans and can't say that I really noticed much difference from other coffee that I have roasted. I use a pour over method for preparing my coffee and the honey roasted tasted great, but without a non-honey roasted coffee bean of the same origin to compare it with I can't evaluate the difference.

Every coffee bean tastes different and I like to change up every couple of days. We do have our favorites or go to coffee beans, but those are just more frequently in the rotation. Today is Costa Rica and I will be roasting Kenya AA later today after cleaning the roaster.
