What process/recipe are you following, Ben?
I’m currently autolysing my flour. Went with 70% whole wheat white, 20% whole wheat, 10% dark rye. Doing a 75% hydration this time. Bumped it due to the extra bran in all the flours.

My neighbor came by my house this morning at 2AM, pounding on the door. Good thing I was still up playing the drums.
