Hc Criollo Toro - nothing like a good Criollo imo. I love how they often start out with peppery, mineral & floral notes and eventually transition to a buttery-cocoa base towards the end. I've said it before and I'll say it again, more companies should consider experimenting with dedicated Criollo blends.
