Almond milk
Anybody make their own almond milk? I just made some tonight and its pretty good. I made a honey one, a cinnamon and nutmeg one, and a peanut butter and honey one. Pretty simple to make.

It's not milk, it's almond "juice" or almost "liquid" but not milk. There's only one kind of milk "moo cow **** milk"... as Lewis Black would say.

Almond milk is the best nut milk that you can make. I have tried making all kinds during fast days and lent but the only one that tasted remotely like milk was almond milk with a bit of sugar in it. I use a Ninja blender but Vita-something is supposed to be the best one. I haven't made it in a long time though, cleanup is a pain and I get that pulverized almond stuff everywhere.

Try making Horchata and add almonds.....almost too good (and damn good with a shot of Jamaican rum!)

I've made this and it's good.
I tried it with some vanilla and a dash of cinnamon, but then it just tastes like Horchata. And if you are going that route, might as well make straight Horchata, rice is much cheaper than almonds and we always have that in the pantry too. I can't get it to taste like the retail stuff, but it's still pretty good. Haven't found a good use for the leftover almond pieces. |

Been making it the last couple of weeks. I ike Cashew milk too and the texture is so different. Brazil nut milk is supposed to rock, but haven't found them raw at an attractive price. Can buy raw almonds for $5 a pound at the Indian grocery store.

I usually spread the almond pulp onto a cookie sheet and throw it in the oven on the lowest temperature it will go to dry it out. I check it every thirty minutes and stir it up until its completely dry. once it's dry, I usually throw some random seasonings in it and use it for bread crumbs to coat fish, chicken, whatever. its pretty tasty and better for you than bread crumbs.
