I have an offset smoker now but its charcoal fired. Next step will be electric or gas this summer. +1 to all the seasoning comments. Id find some year old fatty meat in the freezer and cook it to a crisp, then toss it out, and you should be off to a good start. __________________ If I had something smart to say, I would definitely put it here.
