Default Penfolds Koonunga hill 2005

I don’t drink as much wine as I use to. So most of my wine I have been sitting on for about 2 years or more. To night my girl and I fired up some rib eyes and I opened up a bottle of Penfolds Koonunga hill shiraz/cabernet blend from 2005. I like to let most of my wines open up in a decanter. To night I said no I am just going to drink it. I am glad I did. After letting it rest it was like 2 different wines. Once I first opened it has a very sweet flavor with a nice dark ripe fruit. It went very well with the rip eye and greenbeens. It did not go well with the tiramisu, I kind of figured that. Once it was set to rest for a few hours it became a little sour and reminded me of young unripe soft fruit. Next time I open another bottle from it I will just have to drink it real fast or leave in corked
