Swedish meat balls
SWEDISH MEAT BALLS
Makes 6-8 Servings 1 Cup Fine, dry bread crumbs 1 Teaspoon salt 1 LB ground beef ½ Cup brown sugar ½ LB ground pork ¼ Teaspoon pepper ½ Cup mashed potatoes ¼ Teaspoon allspice 1 egg, beaten ¼ Teaspoon nutmeg 3 Tablespoons butter 1/8 Teaspoon ginger 1 Tablespoon instant coffee Lightly mix together in a large bowl: ½ Cup bread crumbs, ground beef, ground pork, mashed potatoes and the 1 beaten egg. Then add: Salt, brown sugar, pepper, allspice, nutmeg, ginger and instant coffee Shape mixture into balls about 1 inch in diameter. Roll balls lightly in remaining crumbs. Heat in the skillet over low heat. Melt the butter. Add the meatballs and brown all sides. Shake pan frequently to brown all sides and to keep balls round. Cover and cook for about 15 minutes or until thoroughly cooked. |
