4 servings 2 tbsp olive oil ¼ cup diced smoked turkey 1 carrot, peeled and sliced 1 stalk celery, diced 1 small onion, diced 1 lb ground sirloin 2 cloves garlic ¾ cup red wine ¾ cup chicken broth 1 can (14 oz) chopped tomatoes ¼ cup milk 4 oz. penne pasta 4 tbsp grated mozzarella Heat olive oil in large saucepan over medium heat. Add smoked turkey, carrot, celery, and onion. Cooked until lightly browned and very tender (10 min). Peel garlic and crush cloves with back of knife. Add to pan along with beef. Cook until beef is browned (5 min). Add wine, stirring well, and cook for 10 more min. Add chicken broth, tomatoes, and milk; simmer uncovered over medium-low heat for 30 minutes, stirring occasionally to prevent sauce from sticking to the pan. Cook pasta according to package directions. Drain, and top it with the meat sauce. Garnish with the grated cheese. Calories: 485, Protein: 35g, Carbs: 32g, Fat: 21g, Sodium: 409mg, Fiber: 4g
