A friend sent me two fresh Maine lobster tails for my bday (12-14 oz each). So I decided to go with an old favorite, the lobster pie from the Maine Diner.
Such a simple yet delicious dish. They boil the lobsters but with tails I prefer to broil them as it's easier to time and they come out melt in your mouth good, nothing worse than lobster that has chew to it. ![]() The mix is simple, Ritz crackers, butter, lemon and a little BAM! Layer the lobster. I only used one tail, the other is going to be a giant lobster roll for lunch on my bday. ![]() Cover with my crumb mixture then in the oven for about 15 minutes or until the top browns. ![]() Finish with a little squeeze of lemon over the top then devour it like a starving man going down on a ham sandwich. ![]() |
