Ladies & Gentlemen - It Is Moojito Time
Hundred degrees at or near for more than a week? Big fat cigar this afternoon? That only leaves the Moojito Classico...
Into a large glass add half a lime cut in four pieces atop 10-12 mint leaves lightly rustled. Muddle gently but firmly to bust open the lime and slightly damage the mint leaves but not enough to rip the leaves into pieces or to get lime peel bitterness released. Top with 1.5T to 2T of simple syrup and a splash of club soda; stir gently leaving mint on the bottom. Fill glass to the top with crushed ice. Add 1.5 ounces of light rum and stir gently. Retop with ice and fill to the top with club soda; whack a nice sprig of mint to open up the aroma and top as a garnish. The Moojito Classico: Sip slowly through the ice and find, as it melts, the entire glass remains light and refreshing - never a hint of anything except cool lime and a hint of mint.
