Ok you read my mind. I just happened to see this. Now I am going to have to try and make these since I am Polish and from Milwaukee which I think is the home of the Friday Fish Fry.

My dad made the best Potato Scones (Scottish) Nothing but mashed potatoes and flour made into a dough and flattened, fried and smothered in butter, salt and pepper (maybe cheese whiz)

Re: Potato pancakes
I like to add some shredded leeks or green onions... Stir in a touch (1/4 tsp) of ground Tumeric; adds nice color to the oil and pancakes.

Re: Potato pancakes
The wife's recipe.
You need to grate the potatoes and then squeeze all the water out, add the onions to the potatoes and stir in egg and salt. 1 pound potatoes 1/2 cup finely chopped onion 1 large egg, lightly beaten 1/2 teaspoon salt Fry them in a little olive oil and make more than you think anybody could possibly eat. Yukon Gold potatoes make some really outstanding laktes. |
