Default Stuffed Mushroom Appetizers (With Bacon!)

A friend of mine made some version of this appetizer for the superbowl a few years ago, and I decided to try to re-create the recipe a couple days ago. These are really good and simple appetizers for a party. Here's what you do:

-Buy small mushrooms, whichever kind you like. Pull the stems out and stuff the caps with italian sausage. I use Jimmy Dean original.

-Wrap the stuffed caps in one full strip of bacon so the mushroom is entirely covered with bacon, and put on a cookie sheet.

-Bake at 350-400F until the bacon is crispy on the outside (usually seven to ten minutes)

-Toss the bacon wrapped caps with just a bit of barbecue sauce, not so they are dripping, but so they just have the slightest bit of coating. You shouldn't be able to see the sauce on them, just taste it a bit. Moderation is key.

Total prep time for a quart of mushrooms - fifteen to twenty minutes including baking time. Should make about twenty.

Enjoy!
