Anyone ever make turkey pastrami?
My brother is coming up next week for some cocktails, fishing and cigars. We always want to cook something interesting soe asked if we can do a turkey pastrami in my charcoal smoker.
We wanted to do it with a butterflied whole turkey instead of just the breast Any thoughts? I've only used the charcoal smoker once before so it should be interesting.

Here are some spices you may want to consider for the Turkey rub:
2 tablespoons coriander seeds 2 tablespoons cracked black peppercorns 3 tablespoons kosher salt 3 tablespoons sweet paprika 2 tablespoons dark brown sugar 1 tablespoon mustard seeds 1 tablespoon ground ginger 6 garlic cloves, minced What kind of smoker do you have? What do you use to create the smoke? |
