Went to a fundraiser dinner for one of my friends farm. They're pig/chicken farmers. Menu consisted of their Mule foot/Berkshire cross breed:

1st course - braised/grilled pork belly skewers over a bed of local green, Asian spiced jus
2nd course - old school chicken soup. Nice touch with some carmelized onions.
3rd course - Muleshire 3 ways. Braised thinly sliced loin, Chinese 5 spice braised shank, "Nacho Mama" pork sausage.
4th course - lime scented blueberry jam tart, with a lemon creme fraiche butter.

Last night: roasted leg of lamb
Tonight: roast chicken breast with spinach in garlic and oil.

Of course a few glasses of vino to wash it down

Black angus porterhouse with grilled Klondike rose potatoes.

Used that salting technique mentioned here before. Damnit, it's good.

Here's after salting/seasoning, rinsing and drying:

And a closer shot of just how tender the meat gets. Fork tender already:

And done:

Chicken Cacciatore & pasta last night.

Pork Marsala w/potatoes tonight.
Although I 'cheated' & used Shiraz.
The trick is to add Gran Marnier (burn off the alcohol first)
to sweeten it up. Then add mushrooms sauteed in sherry.

Barnyard Burger at Baileys. Angus burger topped with a mix of applewood smoked bacon & cheese, mayonnaise, and a sunny-side up fried egg!

Oh my. Big haul at the market today. Fresh Italian porcini mushrooms and black truffles. Had those in a cream sauce with homemade pasta.
