I made this a couple times. The last time was for a company party 3 gallons.
I left most of the hot out for the simple reason when you make it for a lot of folks (50) I found you can add as much heat as you want, but you can't take it out. I had a couple bottles of Jesse james Jalapeno sauce for the adventurists to trick it up to their liking. I used a combination of chuck beef and pork butt for the meat. No beans of course.
