Haystacks, the EASY candy
My mom makes these all the time, well, holidays, anyway, and the other day, Chow mein noodles were on a display at the mart, so I got them, found the cashews and a bag or two of butterscotch chips. If you have no double boiler to melt the chips, just nuke em, BUT WATCH EM! These F'ers burn long before the whole container is melty, so stir every 15 secs or so if Nuke-ro-waving. Anyway, just mix a bag of chow mein noodles and a can of cashews in a bowl, then stir in your melted butterscotch chips(bag, bag and a half), and keep stirring til the dry stuff is coated and pretty evenly sticky. Then just form/drop little haystacks onto wax paper and let cool. YOU talk about GOOD! NO salt or sugar or nothing, but the noodles have just that hint of salt so they are really excellent. Three ingredients and no real work. What a candy/cookie. If you like em, let me know. These are LITTLE KNOWN, and I am happy to have people get into them like I do. They seem to be good in their un-browned form when you have a double boiler, or the slightly caramelized version of "nearly burnt the chips in the micro". If you accidentally burn a patch of chips, just scoop it away before mixing. NO WAY do you try to salvage burnt parts. but darker than normal brown is OK.

you can place a bowl over a pot of hot water as a substitute for a double boiler. just make sure the bowl is larger than the pot.
these sound pretty good and also fun for kids to make... gonna give them a try.

I overly browned my chips, I had two pyrex lasagne dishes in there working as a double boiler, but toget the water boiling, I had to turn up the oven quite a bit. Then DUH, I realized that I could do all that BEFORE putting the chips in. IDIOT. But my first ever batch came out darker and a bit more caramelly than my mom's but you see the mistakes I made. But however you get your stuff melted, these are GOOD!
