Stuffed Jalapenos
I just pre-made these for tomorrows tailgate and figured I would share the recipe. These are great appetizers.
12 med-large Jalapenos 1 big container (16oz I believe) of cream cheese 1 2cup bag of sharp cheddar cheese 1/2lb of pulled pork, WITHOUT BBQ sauce garlic powder onion powder bbq rub 2 tbs of bbq sauce Mix the cream cheese, cheddar cheese, pork, and bbq sauce together in a bowl. I find that microwaving the cream cheese for about a minute to soften it up works well. Then add a couple dashes of the garlic and onion powder. Mix this all up until it's like a paste and toss in some of your favorite bbq run to season the mixture a bit. Now cut the top and bottom off the jalapenos. Cut down one side of the jalapeno so that it opens up. Clean out the seeds and membrane and then fill it with the mixture. Repeat the process until all 12 peppers are full. Place a tooth pick through the pepper so that it holds together. Now, if your tailgating, throw some tin foil on the grill and put the peppers with the filling side up on the foil over med-high heat for about 15 minutes until it's grilled a bit and the filling is hot, and enjoy. If your at home, put them on a cookie sheet and cook them in an oven at about 350 for 15-20 minutes and enjoy. |

Or,... top 'em, scoop out the guts, fill 'em with whatever, and use a chile grill

I make ABTs all the time. Here is my usual:
Wear gloves BTW... Slice stem end off of jap Remove seeds and veins from the inside (I use a vegetable peeler and just go around the inside) Stuff with cream cheese Wrap in thin sliced bacon - 1 slice per jap Dust with Dizzy Pigs Jamaican Firewalk or Swamp Venom rub Smoke at 230 for about three hours until the bacon is very brown They are so good it is ridiculous. I have also put all kinds of things inside with the cream cheese. Some are: Chopped Little Smokey sausages Chopped cooked shrimp Chopped cooked crab Pulled pork Chopped brisket Leftover taco meat |
