Default Bacon Wrapped, Shrimp/Artichoke Stuffed Portobello

Made these last night for dinner. Turned out really good.

4 portobello caps, stems removed (save for stuffing), gills removed
1/2lb peeled, deveined shrimp, roughly chopped
1/2 med onion finely chopped
3-4 artichoke hearts, chopped
1-2 cloves garlic, minced
1/2 cup grated Parmesan cheese
1 egg, beaten
1/2 c breadcrumbs (approx)
3 tbsp parsley, finely chopped
Zest of half a lemon
1/4 tsp red pepper flakes
2 slices bacon
Salt/pepper to taste
2 slices of bacon per cap

Preheat oven to 400F

Stuffing
Cut 2 slices bacon into smallish pieces. Sauté in pan over med heat to render out fat, till just beginning to crisp. Chop reserved stems into small dice. Add onion, garlic, artichoke, stems to pan and continue to sauté until onions are translucent, about 5-7 mins. Season with salt/pepper. Add shrimp and chili flakes and sauté 1-2 mins more. Place contents from pan in a bowl to cool. Once cool, add cheese, parsley, lemon zest, egg and mix. Add enough breadcrumbs to form a cohesive mix.

Spoon stuffing mix into each cap, then wrap with two strips of bacon over the top of the stuffing, tucking ends under. Place on foil lined baking tray and put into oven. Cook for 16-18 mins, then turn on broiler and finish crisping bacon, another 2-3 mins.

This sounds fantastic....just had grilled shrimp for dinner tonight but this will get made this weekend. Thanks for sharing.
