Tzatziki sauce
Simply put, it's that wonderful, delicious, cucumber and garlic sauce you get on your gyro, shwarma, kufta or falafel sandwich.
Tzatziki sauce: 1 Cup plain yoghurt OR Labne* 1 Cup grated cucumber, peel and all* the small, seedless Persian cucumbers have the best flavor and consistency for this sauce. 1 large clove garlic, pressed or mashed into a paste 2 Tb FRESH lemon juice Grate the cucumber onto a clean kitchen towel, then wring all the juice out of it. Mix all ingredients well, add more or less lemon juice to taste. Let this sauce sit at least an hour before serving to develop the flavors. *Labne up next....

I make this as a dip and eat with pita chips.
Make mine a little different. Cucumbers with the seeds cut off. Lay them out in strips and dry them off. Sour cream, tablespoon of olive oil, minced garlic (to taste), salt and pepper to taste. Mix all together and let sit for 2 hours. Light and refreshing.
