Too many to list, but I wanted to be a pastry chef... potential career change from burning out in high tech. I never finished the classes, but I still drool at various culinary artistry books or professionary pastry guides. I'm very afraid to go to Moe's place someday...

If you like Cajun food; gumbo, jambalaya, etc., Chef Paul Chef Paul Prudhomme's - Louisiana Kitchen Cookbook has a lot of good recipes.

The only "staple" I have is the Joy of Cooking, although I've been meaning to get my hands on "The Silver Spoon". I have quite a few Italian and pizza-specific cookbooks as well.
