Re: Slow Cooker Recipes
Here's one:
1 pork shoulder roast, 2 lbs 1 can pinto beans, rinsed and drained 1 can diced green chiles 2 Tbsp taco seasoning (I make my own) Place pork roast in slow cooker, pour in pinto beans and chiles, and sprinkle taco seasoning over the pork. Cook on low for about 8 hours. Remove pork from cooker, shred and return to cooker to mix with pinto beans. Serve over rice, top with salsa, cheese, lettuce, etc. You can also check out the UN Meatballs recipe I posted a while back. |

Choucroute Garnie
I make this one frequently, but have adopted to my own style. This is a good basic recipe to start off with. I do make several changes that make it easier and tastier, but you get the idea from reading the recipe. Ingredients: 1 3/4 pounds smoked meaty ham hocks 1 pound fully cooked bratwurst 8 ounces thick-sliced bacon strips, cut crosswise into 1-inch pieces 2 large onions, chopped 1teaspoon juniper berries (optional) or Gin 1 teaspoon whole black peppercorns 10 whole cloves 8 whole allspice 3 bay leaves 2 2-pound jars sauerkraut, squeezed dry 2 pounds fully cooked kielbasa, cut diagonally into 1-inch pieces 1 pound fully cooked knockwurst 2 cups Alsatian Pinot Blanc or other dry white wine 2 pounds small red-skinned potatoes 2/3 cup chopped fresh parsley Assorted mustards Preparation: Place ham hocks in large saucepan. Add enough water to cover by 2 inches. Bring to boil. Reduce heat, cover and simmer until meat is very tender, about 2 hours. Transfer hocks to medium bowl. Boil broth until reduced to 2 cups, about 15 minutes. Remove meat from bones; discard bones. Place hock meat in medium bowl. (Can be made 1 day ahead. Cover hock meat and broth separately; chill.) Preheat oven to 350°F. Heat heavy large pot over medium-high heat. Add bratwurst and bacon. Sauté until bacon is crisp and bratwurst is brown, about 10 minutes. Place in bowl with hock meat. Add onions, spices and bay leaves to same pot. Sauté until onions are tender, about 5 minutes. Mix in sauerkraut. Add all meats; press to submerge. Add reserved broth and wine. Boil 10 minutes. Cover choucroute and bake 1 1/2 hours. Meanwhile, cook potatoes in pot of boiling salted water until tender, about 18 minutes. Drain; cool slightly. Cut potatoes in half. Dip cut sides into parsley. Arrange sauerkraut and meats on platter. Surround with potatoes. Serve with mustards and horseradish.

Re: Slow Cooker Recipes
all i use my slow cooker for, for the most part, is pulled buffalo chicken. i usually use 7lb of boneless chicken thighs, hand cut as much fat off as possible, put in slow cooker with 2-3 different types of your favorite buffalo sauce (i usually use franks, budweiser wing sauce, and whatever else jumps out at me), put on high for about 7-8hours, stirring every hour. put on a bun with ranch or bleu cheese, whatever tickles your fancy, end enjoy
boneless thighs can usually had for about a buck fifty a pound, so its a cheap recipe that lasts for a while, or good for big parties stearns

Re: Slow Cooker Recipes
If your like Baby Back Pork Ribs, here is a great, easy recipe. This will also work with spare ribs!
Take two full slabs of ribs (one if you have a small cooker). Dry rub them thoroughly with your favorite seasonings, really rub it in. Cut them up into 4 or 5 bone sections and then stand them up sideways in the cooker, with one of the bone ends down. Pour in one 12oz bottle of your favorite dark beer, only one bottle, we don't want too much liquid. Slow cook for 8 hours on low heat. You'll have yourself a feast!!!
