Remove the pork, pull it apart with 2 forks, then return it to the crockpot, stir everything together, and cook for an additional hour.
 You can serve this over rice, or drape tortillas over an oven-safe bowl and bake to create taco bowls.
 Top with cheese, lettuce, sour cream, salsa.
