How aged does it need to be? Honestly Costco sells quite a few good cheeses at better than market prices. 3 year aged cheddar, aged asiago, parm regiano, etc. Just depends on what they carry on...

On the south side of Denver, I would suggest taking a quick drive up I25 about 15 miles to a place called The Smoking Cave. It should only take you around 20 mins unless you hit that peak 5pm rush...

The 858 Rosado is not the same one as listed on here... it is an 858 Sungrown Rosado wrapper... so it has a green band and the red ribbon with the cedar. Saw them at my B&M... picked one up to show...
