Christmas Brunch
A friend sent me two fresh Maine lobster tails for my bday (12-14 oz each). So I decided to go with an old favorite, the lobster pie from the Maine Diner.
Such a simple yet delicious dish. They boil the lobsters but with tails I prefer to broil them as it's easier to time and they come out melt in your mouth good, nothing worse than lobster that has chew to it. https://scontent-lax3-1.xx.fbcdn.net...6d&oe=56D3C125 The mix is simple, Ritz crackers, butter, lemon and a little BAM! Layer the lobster. I only used one tail, the other is going to be a giant lobster roll for lunch on my bday. https://scontent-lax3-1.xx.fbcdn.net...f4&oe=571E3583 Cover with my crumb mixture then in the oven for about 15 minutes or until the top browns. https://scontent-lax3-1.xx.fbcdn.net...4d&oe=57021361 Finish with a little squeeze of lemon over the top then devour it like a starving man going down on a ham sandwich. https://scontent-lax3-1.xx.fbcdn.net...17&oe=57022B38 |

I took Mom to a Thai restaurant for dinner. I feel so sacrilegious. I did however, order the duck. |
