Breakfast...sous vide eggs, bacon, tomato confit...
started with about 1 1/2 lbs of heirloom cherry tomatoes, garlic, onion and a couple handfuls of arugula....cooked down about an hour or so in bacon fat and evoo...cooked eggs sous vide at 167 for 14 minutes...multigrain toast and bacon....good breakfast!!

I think I'd roast the tomatoes and peel the skins off just for pretty's sake, but it still looks out of this world.
Maybe some spinach in there to stretch the arugula? Make this for me sometime, will ya, Keith? :D Maybe some Hollandaise sauce, too. :) |

Keith, which sous vide circulator do you have? I'm thinking of picking one up. Just did a redneck version (cooler with 135°F water) to reheat a steak.
