Beer cheesecake
Yeah, you read that right. I'm in culinary school and we made a beer cheesecake last week, and it kicked ass. Here's the recipe for a half batch(two 9' round cake pans)
2 lbs. cream cheese 9.6 oz. granulated sugar 1/2 oz. vanilla 1/2 oz. lemon icing fruit/ zest 4 whole large eggs 2 egg yolks 2.4 oz. heavy whipping cream (now the best part) 5 oz. Guiness or a dark porter beer(or whatever kind you prefer, these give the best flavor) Beat the cream cheese and sugar in a mixer for 4 minutes, then add the lemon. Scrape the bowl well, then add eggs, yolks, and vanilla a little at a time until well incorporated. Add whipping cream, mix on low for 1 minute. Mix in the beer until you have a nice, well blended mass. Grease and line pans with parchment paper, put them on a sheet tray with water, and bake at 350 until it doesn't jiggle. When its done, let it rest for 2 hours, then flip it out and enjoy! at this point, you could add graham cracker crust or fruit on top, I used raspberries and it was awesome. |

How come when Dad asks for the recipe he gets a cockeyed set of snapshots taken with a phone, but the Brothers here get a nicely transcribed version?
